Need something different to do with pumpkin? Tired of the same old pumpkin pie?
Then, have I got a recipe for you: Tri-Layer Pumpkin Dessert
Tri-Layer Pumpkin Dessert
Preheat oven to 350 F.
Bottom Layer: mix the following ingredients together
- 1 egg
- 1/2 C soft butter or margerine
- 1 pkg yellow cak mix (1 C set aside for use in the topping)
Press into the bottom of a 9x13 pan (do not bake).
Middle Layer: mix together
- 2 C pumpkin (yes that is slightly more than 1 can - if you actually follow directions)
- 3/4 C sugar
- 1/2 tsp salt
- 1 C milk
- 2 eggs
- 2 Tbl pumpkin pie spice
Pour onto 1st layer
Top Layer: mix
- 1/4 C sugar
- 1/4 C softened butter or margerine
- 1 C cake mix (reserved from top layer)
- 1 tsp cinnamon
Sprinkle on top.
Bake at 350 F for 35-40 minutes. Top with whipped cream (or plain is also good)
I actually followed directions, except for the amount of butter I used on the bottom layer. I forgot myself and thought 1 stick of butter was 1/4 cup (duh, I was mixing up cups and pounds), so I ended up using 2 sticks of butter. everything worked out anyway - it was just even more fattening and cholesteroling than it normally would be.
WS's official opinion v- "Mighty good."
I like "cholesteroling"--both as a word and as "mighty good" eating. However, the HH & CC household shall probably settle for a bit less cholesterolly Tri-Layer Pumpkin Dessert. As HH isn't a fan of pumpkin, this dessert will be one of which I get to eat more than a few bites. Thanks for the recipe--I just printed it out.

I debated using that "word", but decided everyone could figure out what I meant (and I was to lazy to change my sentence around to use the proper set of words).
I ended up putting about 2/3 of it in the freezer, for future eating. It was so scrumptious that I could see myself eating the whole thing in a day (beating off WS with a bat the whole time), and decided that my arteries would thank me for not doing so.
